Layered granola breakfast pot
(Serves two)

Enjoy a layered granola pot for breakfast
YOU NEED: 250g frozen summer fruits; 250g Greek yoghurt; 100g super berry granola; 1 small handful raspberries, to garnish; 1 small handful blueberries, to garnish; 2 tbsp honey.
METHOD: Remove the frozen fruits from the freezer ten minutes before starting, to allow them to thaw slightly, then blend.
Pour a quarter of the yoghurt into the bottom of each glass, then pour a quarter of the blended fruits on top of the yoghurt.
Sprinkle a quarter of the granola on top of the fruits then repeat the layers one more time.
Garnish with fresh raspberries and blueberries then drizzle with honey.
Banana and cinnamon pancakes
(Makes 12)

Pancakes are the perfect treat in the morning
YOU NEED: 1 tsp baking powder; ½ tsp ground cinnamon, plus extra to serve; 6 tsp golden caster sugar; 125g plain flour; 1 tsp vanilla extract; 100ml semi-skimmed milk; 1 egg; 1 tsp of butter, melted and slightly cooled; 2 large bananas or 4 small, roughly chopped; 2 tbsp vegetable oil, for frying; 6 tbsp low-fat Greek-style yoghurt; 6 bananas, sliced, to serve.
METHOD: Add the baking powder, cinnamon and sugar to the flour, and the vanilla extract to the milk.
Create a well in the centre and add the egg with about a third of the milk and all of the melted butter.
Combine everything with a whisk. Once all the flour is incorporated, add the remaining milk and, using your whisk, combine it all.
Allow the mixture to rest in the fridge for at least 30 minutes. Mash the chopped banana into the batter and stir through the mix to combine. Heat a little oil in a frying pan then add 2 tbsp of the batter. Cook the pancakes on both sides, turning with a spatula.
Once golden brown, set aside and keep warm then continue with the rest of the batter.
Serve immediately with banana slices and 1 tbsp Greek-style yoghurt and a sprinkling of ground cinnamon.
